St. Augustine's Willy Wonka
Creme de la Cocoa is sort of like St. Augustine's version of Willy Wonka's Chocolate Factory. We met Nils, who owns it, when he was a chocolatier at another dessert specialist in town — and it wasn't long before he had a vision for what would become Creme de la Cocoa. Nils is a local celebrity, having appeared on Cupcake Wars multiple times; he knows his way around a television studio as well as he does the kitchen.
We enjoy working with Nils so much that we've volunteered to go in and shoot pictures for him, just because we love watching how he and his kitchen work. We've gotten to hear him talk about his philosophy for creating desserts, and it's not about cramming a bunch of sugar into a sweet — it's about carefully, delicately balancing the different flavors so nothing is overpowering. That's a good way to describe Nils himself: a wonderful, pleasant balance of all these skills.
